My virtual book tour for my new book Gluten Free Throughout the Year continues. This month I did an author interview at About.com and had a nice conversation with Teri Gruss, the writer of the Gluten-Free Cooking section of that site. Teri also made, sampled and posted one of the recipes from my book, Banana Coconut Muffins. She and I emailed quite a few times and she told me she was amazed at how true my tip was about making the muffins with no refined sweeteners and refrigerating them for a few days. The muffins taste great (in other words, sweeter) when you do that. It’s a little-known way to dramatically cut down or cut sweeteners out completely. Here’s what Teri emailed me yesterday:

I’ve been out-of-town for a couple of days and took your muffins with me. Melissa, they really do get better by the day – such a pleasant surprise! I ate one this evening and the mellow banana sweetness was delicious – with no added refined sugar! I made them Saturday afternoon! Most gluten-free baked goods would be returning to dust by now.

And here’s what she emailed me this morning:

I have one muffin left, which I am eating for breakfast today – day 4! Moist and as sweet as can be.

So, don’t take my word for it. Take Teri’s word, too. You can cut out sugars and gluten (and often grains) and still make very tasty food. Gluten Free Throughout the Year is a guide with tips and recipes that show you how.
